Cinnamon Spice Banana Bread (Gluten-Free)
Most of you know of my love affair with essential oils.
What? You don't?
Well, sit yourself right down and let me tell you about them!
About five years ago, around the time our first child was born, we were introduced to essential oils by a friend. We had already been moving towards a cleaner, less toxic, more natural lifestyle, and essential oils were a perfect fit. We began incorporating them into our everyday lives and built a stash of oils which make up our family "wellness cabinet" and which we use for pretty much everything from minor annoyances, to cooking, to supporting the health of every system of our bodies.

By the grace of God, neither of our children has EVER had the need to visit a physician for an illness. For the past 5 years, we have maintained our family's wellness through sunshine, fresh air, pure water, organic, real food, and the regular use of essential oils. There seems to be a growing movement of people wanting to get away from conventional medicine in favor of a more natural approach to wellness. I find that so encouraging!
One of my FAVORITE ways to use essential oils is in cooking. Pretty much any food or drink can be enhanced by Young Living's pure, potent, delicious essential oils. Here's an easy recipe which incorporates one of our favorite holiday-time oils; Cinnamon Bark!

Moist, tender, flavorful, and bursting with sweet, spicy flavor.
Serve thick slices, warm from the oven, slathered with creamy yellow butter.

Recipe: Cinnamon Spice Banana Bread (Gluten-Free)
3 ripe bananas 1/4 cup raw honey
1/4 cup softened butter or coconut oil
3 eggs
1/2 cup coconut flour
1 cup sprouted brown rice flour (you can use plain rice flour, but sprouted makes it more digestible). We get ours from Azure Standard.
1 tsp baking soda
1/2 tsp sea salt
2 tsp cinnamon plus 2 drops Young Living Cinnamon Bark essential oil
Preheat oven to 350 degrees (F). Mash bananas in medium mixing bowl until smooth. Add honey, butter, and eggs and mix well. Add remaining ingredients and blend until smooth. Taste batter and add 1-2 more drops of Cinnamon Bark essential oil until it's as strong as you like it. Pour batter into a well-greased 8"x4" loaf pan and smooth the top with a spatula. Bake for 45-50 minutes. Test center with toothpick. If it comes out clean, the bread is done.
